Ingredients

  • 1 skinned chicken breast (125g)
  • 1 teaspoon vegetable oil
  • ½ butternut squash (prepared weight approx. 350 grams)
  • 2 medium-sized carrots (prepared weight approx. 200 grams)
  • 1 medium-sized potato (prepared weight approx. 200 grams)
  • 300ml boiling water
  • 142ml single cream

Method

    Cut the chicken breast into strips and stir-fry in a large pan with vegetable oil until the meat turns brown.

    Peel and chop the carrots, potato and squash, removing the seeds, and add to the pan. Place the lid on and cook for 5 minutes, stirring occasionally.

    Pour in boiling water, stir well and bring mixture to a boil. Cover with the pan lid and simmer for 30-40 minutes (or until all the vegetables are softened), stirring occasionally.

    Remove from heat and let the vegetables cool for a few minutes. Gently mash until desired consistency.

    Pour in cream and blend well.
