The warm fragrance of cumin and naturally sweet corn kernels go well with the soft pillows of paneer, whereas hints of coriander could be a unique taste your toddler might come to love.

Fresh Paneer, Corn and Pea Bhurji

Ingredients

  • 200ml fresh cow’s milk
  • 1 teaspoon lemon juice
  • 2 teaspoons oil
  • ¼ teaspoon cumin seeds
  • 2 tablespoons sweet corn kernels, boiled and crushed
  • 2 tablespoons green peas, boiled and crushed
  • 1 tablespoon fresh coriander, chopped

Method

  • 1

    To make the Paneer, heat fresh cow’s milk in a deep non-stick pan till it begins to boil. Add in lemon juice and stir till the milk curdles. Strain the Paneer through a muslin cloth and dip in chilled water immediately.

    Heat the oil in a non-stick pan and add the cumin seeds. Once they begin to change colour, add the Paneer and mix.

    Add the sweet corn kernels, green peas and mix well.

    Cook for 2-3 minutes on low heat. Add chopped coriander and mix.

    Serve at room temperature.
