Spice up regular chicken cubes by marinating them in lemon zest and juice, infused with herbs such as parsley and sage. The fruits' natural acidity softens the chicken so your baby can easily chew them. Top it off with a drizzle of creme fraiche for that tasty kick.

Lemon and Herb Chicken Medallion

  • ½ lemon
  • 1 tablespoon vegetable oil
  • 1 small clove of garlic, chopped finely
  • A pinch of parsley
  • A pinch of sage
  • 100 grams small chicken medallion
  • 4 small new potatoes
  • 1 tablespoon vegetable oil
  • 150 grams green beans
  • 1 dessert spoon crème fraîche

    Finely grate the lemon, and put a full tablespoon of lemon zest in a bowl with vegetable oil, the juice from the same lemon, parsley, sage and garlic.

    Put the chicken medallion into the bowl and mix it with the lemon marinade.

    Cook new potatoes in boiling water for 20 minutes.

    Heat vegetable oil in a pan, add the chicken and marinade juice. Cook gently for 6 minutes on each side.

    Cook green beans in boiling water for 5-6 minutes. When done, remove from hot water and drain.

    Cut the chicken medallions into small chunks, serve with a side of green beans and a lovely drizzle of crème fraîche.
