Sweet Potato and Lemon Chicken Bake

An updated version of a regular chicken mash is the Sweet Potato and Lemon Chicken Bake. Marinating chicken in zest and lemon juice ensures the chicken is tender and helps infuse a refreshing hint of citrus!

Sweet Potato and Lemon Chicken Bake

  • 1 lemon
  • 100 grams chicken breast
  • 1 large sweet potato (150g)
  • ½ tablespoon crème fraîche
  • ½ teaspoon rapeseed oil
  • 1 medium-sized orange pepper, de-seeded and sliced

    Zest the lemon, making sure you don’t grate off the white portions as it will make it taste bitter. Squeeze the lemon juice into a bowl. Pre-heat oven to 200°C.

    Cut the chicken breast into small pieces and marinate in lemon juice and half of the zest.

    Peel the sweet potato and cut into small pieces. Steam until soft.

    Heat rapeseed oil on medium heat and add the lemon chicken, stirring until it starts to brown. Next add the orange pepper and stir for 3 minutes.

    In an ovenproof dish, place sweet potato cubes, lemon chicken and pepper in with crème fraîche. Place dish on the middle shelf in the oven and bake for 5 minutes.

    When done, remove from the oven and cool to room temperature.
